- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion finely chopped
- 3 cloves garlic minced
- 1 zucchini diced
- 1 bell pepper diced
- 2 cups fresh spinach
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add zucchini and bell pepper, cooking until tender. Stir in spinach until wilted.
- In a mixing bowl, combine ricotta cheese, 1 cup mozzarella, 1/2 cup Parmesan, oregano, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta mixture, half of the veggie mixture, and 1/3 of the remaining marinara sauce.
- Repeat the layers and top with the remaining noodles, sauce, and cheeses.
- Bake in the preheated oven for 30-35 minutes until bubbly and golden.
- Let it cool for a few minutes before serving.
