  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 zucchini diced
  • 1 bell pepper diced
  • 2 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  4. Add zucchini and bell pepper, cooking until tender. Stir in spinach until wilted.
  5. In a mixing bowl, combine ricotta cheese, 1 cup mozzarella, 1/2 cup Parmesan, oregano, salt, and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer 3 lasagna noodles, half of the ricotta mixture, half of the veggie mixture, and 1/3 of the remaining marinara sauce.
  8. Repeat the layers and top with the remaining noodles, sauce, and cheeses.
  9. Bake in the preheated oven for 30-35 minutes until bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

  • Allow the lasagna to sit for at least 10 minutes before slicing.
  • This dish can be made ahead of time and refrigerated before baking.
