  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the softened butter and sugar until creamy.
  3. Add eggs, lemon juice, and vanilla, mix until smoothly combined.
  4. Stir in the grated zucchini and lemon zest.
  5. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  6. Add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar.
