Perfect Toffee Apple Pie

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 apples, peeled, cored, and sliced
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 tablespoons lemon juice
  • 1/4 cup toffee bits
  • 1 egg yolk
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix flour, salt, and sugar.
  3. Cut in butter until the mixture resembles coarse crumbs.
  4. Roll out the dough into a circle and place it in a pie pan.
  5. In a separate bowl, combine apples, brown sugar, cinnamon, nutmeg, and lemon juice.
  6. Pour the apple mixture into the pie crust and sprinkle toffee bits on top.
  7. Roll out the remaining dough for the top crust, cut slits for steam to escape, and place it over the filling.
  8. Brush with beaten egg yolk mixed with milk.
  9. Bake for 15 minutes, then reduce temperature to 350°F (175°C) and bake for an additional 30 minutes.
  10. Let cool before serving.

Notes

  • For a richer flavor, add more toffee bits.
  • Serve warm with a scoop of vanilla ice cream.
