Salmon Pasta

A delicious and easy salmon pasta recipe that’s perfect for busy weeknights, combining the rich flavors of salmon with creamy sauce.

  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 pound salmon, skinless and boneless
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add the salmon to the skillet and cook for about 4-5 minutes on each side, or until cooked through. Remove and flake into pieces.
  4. In the same skillet, stir in heavy cream, Parmesan cheese, and lemon juice. Let simmer for a few minutes.
  5. Incorporate the flaked salmon and cooked pasta into the sauce, mixing well.
  6. Season with salt, pepper, and sprinkle with fresh parsley before serving.

Notes

  • This recipe is perfect for using leftover salmon.
  • For added richness, you can substitute part of the heavy cream with mascarpone cheese.
