Salmon Spinach Pasta Dish

  • 2 tablespoons olive oil
  • 1 pound salmon fillets
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. In a skillet, heat olive oil over medium heat and add salmon fillets.
  3. Cook salmon for about 4-5 minutes on each side, or until cooked through. Remove and flake into pieces.
  4. Add minced garlic to the skillet and sauté for 1 minute.
  5. Stir in fresh spinach and cook until wilted.
  6. Add the cream and Parmesan cheese, stirring until heated through.
  7. Toss in the flaked salmon and cooked pasta, mixing until well combined.
  8. Season with salt and pepper, and serve hot.

  • For a lighter version, use half and half instead of heavy cream.
