Savory French Onion Soup

A hearty and comforting dish featuring caramelized onions and turkey bacon.

  • 4 cups onions, thinly sliced
  • 4 slices turkey bacon, chopped
  • 4 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices baguette
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onions to the pot and sauté in the bacon fat for 20-25 minutes until caramelized.
  3. Deglaze the pot with white wine, scraping up any bits from the bottom.
  4. Add beef broth, thyme, salt, and pepper. Bring to a simmer.
  5. Toast baguette slices until golden brown.
  6. Top each bowl of soup with toasted baguette and sprinkle with Gruyère cheese.
  7. Broil in the oven until cheese is melted and bubbly.

Notes

  • For a vegetarian version, use vegetable broth and omit turkey bacon.
  • Experiment with different cheeses like Swiss or cheddar.
