  • 4 slices turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 cups vegetable broth
  • 1 avocado, sliced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Rinse the lentils under cold water and drain.
  2. In a pot, cook the turkey bacon over medium heat until crispy.
  3. Remove the bacon and set aside, leaving the drippings in the pot.
  4. Add the onion and garlic to the pot and sauté until soft.
  5. Add the lentils, cumin, paprika, salt, and pepper, stirring to combine.
  6. Pour in the vegetable broth and bring to a boil.
  7. Reduce heat, cover, and let simmer for about 25-30 minutes, or until lentils are tender.
  8. Serve the lentils topped with bacon, avocado, and cilantro.
