Shepherd’s Pie Baked Potato

Enjoy a delicious twist on traditional shepherd’s pie with this baked potato version topped with turkey bacon.

  • 4 medium potatoes
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and pierce them with a fork. Bake them for about 50 minutes, or until soft.
  3. In a skillet, cook the turkey bacon until crispy. Remove from skillet, chop, and set aside.
  4. In the same skillet, add ground turkey and cook until browned.
  5. Add frozen peas and carrots, beef broth, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Stir and simmer for 10 minutes.
  6. Once the potatoes are done, cut them in half and scoop out a bit of the insides to create space for the filling.
  7. Fill each potato half with the turkey mixture and top with cheddar cheese and chopped turkey bacon.
  8. Return to the oven and bake for an additional 10 minutes, or until cheese is melted.

Notes

  • For variations, try different vegetables or use a different cheese for topping.
  • Make sure to poke holes in the potatoes to avoid steaming.
