Simple Chicken Pot Pie with Biscuits

  • 1 pound chicken breast, cooked and shredded
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 package refrigerated biscuit dough

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large saucepan, melt the butter over medium heat.
  3. Add the flour and whisk for about 1 minute.
  4. Slowly add the chicken broth and milk, whisking constantly until thickened.
  5. Add the chicken, mixed vegetables, salt, pepper, and thyme. Stir to combine.
  6. Transfer the mixture to a baking dish.
  7. Open the biscuit dough and place the biscuits on top of the chicken mixture.
  8. Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown.
  9. Let cool for a few minutes before serving.
