2 pounds beef chuck roast
1 cup beef broth
1/2 cup soy sauce
1/4 cup brown sugar
3 cloves garlic, minced
1 tablespoon ginger, grated
1 tablespoon sesame oil
1 package rice noodles
2 cups broccoli florets
1/4 cup green onions, sliced
Instructions
Place the beef chuck roast in the slow cooker.
In a bowl, mix together the beef broth, soy sauce, brown sugar, garlic, ginger, and sesame oil. Pour this mixture over the beef.
Cover and cook on low for 8 hours or until the meat is tender. Shred the beef with two forks.
Prepare the rice noodles according to package instructions. Add them to the slow cooker along with the broccoli florets in the last 30 minutes of cooking.
Serve hot, garnished with green onions.
Notes
For an extra kick, add some chili paste to the sauce mix.
This dish can also be served with additional sesame seeds on top.
