  • 2 cups beef broth
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the beef chuck roast on all sides until browned.
  3. Remove the roast and set aside. In the same pot, add onion, garlic, carrots, and celery, sautéing until soft.
  4. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook for another minute.
  5. Return the roast to the pot, add beef broth, and cover.
  6. Braise in the oven for about 3 hours, or until tender, flipping once.
