- 2 medium sweet potatoes
- 4 slices turkey bacon
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon olive oil
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 green onions, sliced
- Preheat the oven to 400°F (200°C).
- Peel and dice sweet potatoes into bite-sized pieces.
- In a large bowl, combine sweet potatoes, turkey bacon (cut into pieces), black beans, corn, red bell pepper, cumin, chili powder, and olive oil. Stir to combine.
- Spread the mixture evenly in a baking dish and bake for about 30-35 minutes, or until sweet potatoes are tender.
- Remove from oven and sprinkle with cheese and green onions. Return to the oven for another 5-10 minutes, until the cheese is melted and bubbly.
