  • 2 cups sushi rice
  • 2 cups water
  • 1 pound salmon fillet
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • 1/4 cup mayonnaise
  • 1 teaspoon rice vinegar
  • 1/4 cup chopped green onions
  • 1 sheet nori, cut into strips

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the sushi rice until the water runs clear, then combine with water in a rice cooker and cook.
  3. Once the rice is cooked, let it cool slightly before mixing in the rice vinegar.
  4. Place the salmon on a baking dish and brush with soy sauce, sriracha, and sesame oil before baking for 15-20 minutes.
  5. In a bowl, mix the mayonnaise with the cooked salmon once it is flaky.
  6. Layer the sushi rice in the bottom of a baking dish, add the salmon mixture on top, and sprinkle with green onions and nori strips.
  7. Bake for an additional 10 minutes, then let cool slightly.
