Spicy Salmon Sushi Bake

  • 2 cups sushi rice
  • 3 cups water
  • 1 lb salmon fillet
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 cup green onions, chopped
  • 1 sheet nori, cut into strips
  • 1 tablespoon furikake seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear, then cook it in a pot with 3 cups of water.
  3. Once the rice is cooked, let it sit covered for 10 minutes.
  4. While the rice is resting, prepare the salmon by baking it on a lined baking sheet for about 12-15 minutes, until cooked through.
  5. In a bowl, mix the mayonnaise, sriracha, soy sauce, and sesame oil.
  6. Flake the cooked salmon and combine it with the sauce mixture and green onions.
  7. In a baking dish, layer the sushi rice and top it with the salmon mixture.
  8. Sprinkle with furikake seasoning and bake for 10 minutes.
  9. Garnish with nori strips before serving.

Notes

  • Feel free to adjust the spice level by changing the amount of sriracha.
  • You can add avocado slices for extra creaminess.
