- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, diced
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a large bowl, combine the oats, flour, brown sugar, and granulated sugar.
- Stir in the melted butter and vanilla extract until the mixture is crumbly.
- Press half of the mixture into the prepared baking dish.
- In another bowl, mix together the strawberries, cornstarch, and lemon juice. Spread this mixture over the crust.
- Sprinkle the remaining oat mixture on top of the strawberries.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
- For extra flavor, add a pinch of cinnamon to the oat mixture.
- Feel free to substitute blueberries or raspberries for the strawberries.
