  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs, ½ cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and vanilla, mixing until well combined.
  4. Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
  5. Pour in the sour cream and mix until just combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  8. Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour.
  9. Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
