  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup eggnog
  • 1 tablespoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, nutmeg, and salt.
  3. In another bowl, cream the butter, then add eggs one at a time, mixing well after each addition.
  4. Stir in the eggnog and vanilla extract.
  5. Combine the wet and dry ingredients, mixing until just combined.
  6. If using, fold in the walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Allow to cool before slicing and serving.
