Vegan Zucchini Rollatini

A delightful vegan dish featuring rolled zucchini filled with a savory filling, perfect for any occasion.

Ingredients

  • 4 medium zucchinis
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese, vegan
  • 1/2 cup nutritional yeast
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix spinach, ricotta, nutritional yeast, basil, garlic powder, onion powder, salt, and pepper.
  4. Spread a layer of marinara sauce in a baking dish.
  5. Take a zucchini strip and place a spoonful of the filling at one end, rolling it up tightly.
  6. Place the rolled zucchini in the baking dish seam side down.
  7. Repeat until all zucchini and filling are used.
  8. Top with remaining marinara sauce.
  9. Bake for 25-30 minutes or until heated through.
  10. Allow to cool for a few minutes before serving.
