- 4 medium zucchinis
- 2 cups spinach, chopped
- 1 cup ricotta cheese, vegan
- 1/2 cup nutritional yeast
- 1/4 cup fresh basil, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups marinara sauce
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix spinach, ricotta, nutritional yeast, basil, garlic powder, onion powder, salt, and pepper.
- Spread a layer of marinara sauce in a baking dish.
- Take a zucchini strip and place a spoonful of the filling at one end, rolling it up tightly.
- Place the rolled zucchini in the baking dish seam side down.
- Repeat until all zucchini and filling are used.
- Top with remaining marinara sauce.
- Bake for 25-30 minutes or until heated through.
- Allow to cool for a few minutes before serving.
