- 2 cups black beans, cooked
- 1 cup corn kernels
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup cheese, shredded
- 8 tortillas
- 1 cup enchilada sauce
- 1 bell pepper, diced
- 1 onion, diced
- 2 tablespoons olive oil
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add onion and bell pepper, sauté until soft.
- Add black beans, corn, cumin, and chili powder. Stir well and cook for a few minutes.
- In a baking dish, spread a thin layer of enchilada sauce.
- Fill each tortilla with the black bean mixture, roll tightly, and place seam side down in the baking dish.
- Pour remaining enchilada sauce over the tortillas and sprinkle with cheese.
- Bake for 20–25 minutes until cheese is bubbly.
