Vegetarian Black Bean Enchiladas

  • 2 cups black beans, cooked
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup cheese, shredded
  • 8 tortillas
  • 1 cup enchilada sauce
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and bell pepper, sauté until soft.
  3. Add black beans, corn, cumin, and chili powder. Stir well and cook for a few minutes.
  4. In a baking dish, spread a thin layer of enchilada sauce.
  5. Fill each tortilla with the black bean mixture, roll tightly, and place seam side down in the baking dish.
  6. Pour remaining enchilada sauce over the tortillas and sprinkle with cheese.
  7. Bake for 20–25 minutes until cheese is bubbly.
