Ingredients

  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups diced potatoes
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 4 cups vegetable broth
  • 1 cup frozen peas
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1/2 cup non-dairy milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the diced potatoes, carrots, and celery, cooking for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let simmer until the vegetables are tender.
  6. Stir in the frozen peas, thyme, rosemary, and non-dairy milk.
  7. Season with salt and pepper to taste, then serve hot.

Notes

  • For a creamier soup, blend a portion of it and mix it back in.
