8 ounces fettuccine pasta
1 pound shrimp, peeled and deveined
1 pound salmon fillet
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 cup heavy cream
1 cup cherry tomatoes, halved
1 cup spinach
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
Cook the fettuccine according to package instructions. Drain and set aside.
In a skillet, heat olive oil over medium heat, add the shrimp and salmon, and season with Cajun seasoning. Cook until the shrimp turn pink and the salmon is cooked through.
Add the heavy cream, cherry tomatoes, and spinach to the skillet. Stir until the spinach wilts.
Add the cooked fettuccine to the skillet and toss to combine. Stir in the Parmesan cheese and parsley.
Serve hot, garnished with extra Parmesan if desired.
