Copycat Raspberry Cheesecake Cookies

Delightful raspberry cheesecake cookies that mimic the flavors of a classic dessert.

  • 1 cup butter, softened
  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 cup raspberry jam
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, cream cheese, and sugar until smooth.
  3. Add the vanilla extract and mix well.
  4. Sift in the flour and salt, mixing until just combined.
  5. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  6. Create a small indentation in the center of each dough ball and fill with raspberry jam.
  7. Bake in the preheated oven for 10-12 minutes until golden around the edges.
  8. Allow to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.

Notes

  • For an extra touch, sprinkle powdered sugar on top before serving.
  • These cookies can be frozen for up to two months.
